can you create your own pet to be whatever you want? like an alligator?

You cannot create something out of nothing, certainly not a living, breathing animal. There are some spells (this one doesn't seem likely) that may attract a pet if you are looking for one. If you can't keep an alligator as a pet where you live, or aren't likely to be allowed to have a pet alligator in your environment, then it's unlikely to manifest.

So can you attract like wild animals and stuff by saying something like, “Squirrel, Squirrel come to me I love you so mote it be”?

No. This spell specifically I doubt works at all, but for argument sake, let's say it was. If I were you, I would meditate, visualize your desired outcome, then say this chant. After saying this, go outside and leave food out for the squirrels. sit a few feet away and just observe. Don't talk or move, just watch them. Do this each day, and every couple of days, move a little closer. The squirrels will get use to you, and you might be able to feed them by hand one day. The chant alone won't work, but you could add to it.
