Nothing will happen, you can't become a vampire. Real magic has nothing to do with the fantasy of becoming a vampire, werewolf, mermaid or anything else but what you are. Human! The term "energy vampire" is simply someone who naturally drains energy from others, if it very uncomfortable for them and can often lead to people not wanting to be around you long term.

I am not even sure if you can force yourself to become an "energy drainer", it may simply be a natural occurance.

H2O is right on that it can be a natural occurrence as my best friend mole (nickname) is incapable of not draining your energy when you do magick with him he's a leech at the best of times when it comes to draining energy out of you and it isn't something he can control he just naturally takes in energy.

there are a number of ways of draining people's energy and you don't have to be a energy vampire to do that, you can be a normal practicing witch and simply learn one or a variety of ways to drain people's energy for whatever purpose you deem appropriate.

OmkarPat to answer your question yes you are capable of casting other spells, it's a good idea to learn the basics first but that's literally a couple of hours reading tops, if you want to rush it.
