Appreciate your honesty. There are many things that are confusing to newbies. I was a newbie once too ;)
To answer as best I can:
"Elements aren't real"~ yes indeed they are; you take advantage of their power every day without even batting an eye. They are intrinsic to life on this planet! We could not exist without air or water, nor could anything else. Fire is cleansing, it is warming, and is how we have prepared food for millennia. And Earth? That answers itself.
"Don't believe Avatar!"~ I don't. It was a great TV show, and not too bad a movie. But we cannot, I repeat, cannot, bend the elements to our will. It is a scientific impossibility. Magick only works within the realm of the physical laws which define our universe. Hate to burst that bubble, but this is inescapable truth.
We Humans, as well as all other forms of life, do operate on a set frequency that radiates energy that pulses and exudes this Hertz output. It is this energy that we as practitioners learn to draw from, channel and direct. But as to creating earthquakes, causing rainstorms, and other elemental phenomena, we cannot do such things.
As a beginner, I suggest not putting the cart before the horse. Learn to meditate, ground, and center. Then other aspects of Magick shall be clearer to you.

The closest you can be to "controlling" an actual element and not just using it's energy is to be telekinetic or pyrokinetic. If you are telekinetic or pyrokinetic, you can move things with your mind. Telekinetics can move nearly anything while pyrokinetics can only move fire. There's also aquakinetics and they can only move water. And it's NOTHING like in Avatar: the Last Airbender. Elemental kinetic people are just Telekinetics who can only move certain things. You can't really produce it.

I am also a newbie. I'm a bit confused too. I know we cannot produce fire, earth, air or water from our bare hands, but can we control it? My question is can we move water with our mind or can we make the wind blow faster? Maybe we can move/control fire or make a plant grow faster?

Not at all, this has been drawn out many times in these forums. You cannot control the elements and one should not believe everything you see on the internet.

The elements are used in rituals not as their physical real-life counterparts, but as symbols referring to other things entirely depending on the tradition.

To my experience, most people who are claiming to control an element - or produce any variety of kinetic effect - are either not taking into account other variables that would impact the event or rather skilled stage magicians, working a con.

For example, many people work with a candle flame, and will say they are controlling its movements, size, etc. through will and motion of their fingertips. Generally though, the motion of the fingertips creates air currents that influence both the size of the candle's flame as well as the way it moves, and so forth. A rather obvious example, and yet one that people don't take the time to rationalize before believing.

As others have stated to some extent or another, the elements are real, however. In traditional magic, they are an exploration of the four states of the physical world. By invoking them, we can bring their influence into our magical practices.

I've spoken about them in a bit more depth on another post on the elements that is pinned under General Info.
