There are countless types of protection spells therefore you can learn about them pretty much anywhere the members are willing to be active.
What I suggest is you look through the covens yourself, and after reading their full descriptions you may be able to find a few that actually specialize in that sort of thing. Make your decision out of those depending on which one fits you best.
It also occasionally helps to ask the leaders themselves about their coven, usually if one is polite the leaders are more than happy to answer any questions you may have regarding their coven's specialties.
