You are correct that we don't know too much about the Anglo-Saxon Pagans. They were Christianized shortly after they arrived in Britain. But, the Anglo-Saxons were Germanic in origin so you might want to take a look at Germanic Paganism/Heathenism for more modern sources.

Here's a couple of resources you might want to look at:

" Northern Tradition for the Solitary Practitioner" by Galina Krasskova and Raven Kaldera

" Teutonic Magic " by Kveldulf Gundarsson

" Rites and Religions of the Anglo-Saxons " by Gale Owen

" Pagan Britain " by Ronald Hutton

" The Lost Gods of England " by Brian Branston

" Hammer of the Gods" by Swain Wodening

"Path to the Gods: Anglo-Saxon Paganry for Beginners" by Swain Wodening

Websites:

Heathenry - https://www.bbc.co.uk/religion/religions/paganism/subdivisions/heathenry_1.shtml

List of Anglo-Saxon Deities - https://en.wikipedia.org/wiki/List_of_Anglo-Saxon_deities

Hopefully these will be of some help to you.
