Im new to this so Ive been reading a lot and Im totally stuck on how to cross out the repeating letters in the sentence to make a sigil. Ok so heres a example from a website I went to after a different website on the same subject totally confused me.
Original: IT IS MY WILL TO BE OFFERED RED FRUIT
Done: IT xS MY Wxxx xO BE xFxxRxD xxx xxUxx
Ok why didnt she cross out the I in IT the very first word?
And she didnt cross out one of the F in OFFERED?

Well from the point of view of how this type of sigil works I cannot help you in terms of experience with this method but just by observation I sort of understand. You are seemingly supposed to erase every repeating letter but you don't notice it is repeating till after it is first seen and then you see it the second time. As such you keep the first time the letter appears and only remove the letters that are repeats of the original. The only issue with this observation I can tell is she erased both L's even though she kept the first appearance of every other repeating letter. Maybe it was a mistake on the part of whoever wrote the article you were reading or maybe that is the goal. Honestly based on the rest of it erasing both L's makes little sense but I haven't studied methods of writing sigils much.
The use of sigils is not written in stone. There are a lot of pieces of advice, which can vary. The most common advice comes from a particular book on chaos Magic, which people tend to repeat as if is the be-all and end-all of how to make a sigil.
The general instructions are as follows:
1: Write the statement of intent
2: eliminate all vowels (which was not done in this case, but that does not invalidate the meothod)
3: Eliminate all but one of each repeating letter
4: Arrange the letters into an interesting shape or design
5: charge the sigil (give it loads of energy and intent)
6: 'fire' the sigil, destroy it, and forget about it
