The Demon Ammit?

I have a question about Ammit. The Egyptians saw her as the great demon and the embodiment of fear, and no one worshipped her as a patron Goddess. But I am considering talking to her about it and before I do, I want to know, "is she really a demon, Or is she just a beast that eats hearts?"

If that's what you want to do go for it. Just keep in mind she wasn't worshipped and was the eater of impure hearts. How you see her may very well effect how she comes and appears to you.

She was not worshiped per day she was seen as a saint or archangel is seen she was divine but not that nice

In my opinion, and within the Egyptian systems, Ammit is not a deity. She is a personification of the forces/entities that act upon the soul and spirit during death. This particular force is not fear itself. Ammit was embodied within the culture as the fear of eternal sufferance after death; depicted within contemporary understanding as the severance of continuity of the spirit. Her actual role, however, was to devour impure hearts.

A basic Google search can provide you with the answers you're seeking on that front.

As to whether Ammit is a demon, within the sense of commonly known Western systems she is not. She would, however, be a daemon.
