Substituting Ingredients

I always wondered if you can substitue ingredients in spells, but when i was reading the tips on how to make a spell would they said use the CORRECT ingredients. But what if you dont have access to that particular ingredient? Can you switch it with something with similar properties?

Despite a spell saying the listed ingredients must be used, or are the correct ones, they can be replaced with other things that share the same or similar properties.

like garlic symbolizes the heart and protection, sugar symbolizes the sweetness of the heart, they could be used vise versa, except garlic is a stronger ingredient than sugar, it can or could be used for the same thing, although you should stick with the ingredients you don't have to. kind of like poppy seed can be used with a simular meaning of a negative herb or seed it can work although they are different.
