I love working with herbs, myself. I haven't worked with any of these other than catnip. It's one of my favorites. I usually use it in spells and herbal blends for protection.

Hey, MagickForYou, you forgot the fourth one. haha.
Peppermint
Rosemary
Eucalyptus
Sage
Chamomile
All but eucalyptus are easy to grow. Healing and protection are my uses for these. I use more, but these are my favorites.

My favorites are probably

Lavender - Which i use for pretty much anything from sleep, to meditation, to curing depression.
Hyssop - I use it mostly to bring positive energies and banish negative.
Rosemary - Which I also use for pretty much everything
Mugwort - Which I found to be really powerful
Blue Vervain - Which I use for meditation and sleep/peace

I would have to say mine are (for healing as anything from tea to aroma, and most are great for additives in soaps and other products) These to me are the staples to any wiccans kitchen:

Wild Raspberry leaves
-good in teas for womens discomfort during their time of the month or for those going through menopause.

Sage
-many uses and basic to all.

Lavender
-good with calming (aroma), distressing, etc.., another basic to all.

Mint
-soothing for sore throats, nasal passages (aroma)Congestion, great in tea, etc...

Bay Leaf
-great in tea, spiritual blocker, good with cooking, etc...

My list would have to go like this:

1) Aloe vera - great natural healing abilities.(especially burns)
2) Ginseng - gives natural energy and helps heal in some cases with blood pressure.
3) Hemp (marijuana) - great for crafting necklaces and jewelry, and even the oil can be used as a health product.
4) Rosemary - also great for healing and it just smells like magick.
5) Saffron Crocus - mainly because it looks so cool. It is expensive and for me hard to grow
