The easiest way to achieve a body immortality involves messing with the kill code within the cells. You would also need something to periodically remove all ailments so as not to degrade your body. But if you somehow genetically altered all the cells within your body so they no longer suicide after a certain amount of replications then you would be immortal. The only problem would be upkeep of ones body.
You could try making a Horcrux. If you make too many however, you end up looking like a skull. Don't know how to make one, just read about it in a book once.

you have organs and different parts than other creatures.
evolution would've made you immortal if it wasn't going to screw up the evolutionary chain.
maybe in after a being is evolved that has more power than the average being.

maybe an immortality spell doesnt make the physical body immortal, but the astral body? immortality also doesnt mean you don't necessarily age, so youd be one old fart. :P
