I am thinking about using oak or maple and topping it with amethyst. What do you actually use a staff for? Is it like an over-sized wand?

In many cultures the staff is a symbol of authority.
I'd use it however you'd like.

In traditional craft the staff often has a forked head and an iron foot and is called a 'stang'. In some traditions it is used to represent the presence of the tradition's god in the circle and is driven into the ground in the north of the circle's compass and hung with a pair of crossed arrows.

Staffs and stangs are also used to represent the World Tree and are struck in the ground and used as a axis mundi focus for Otherworldly journeying (astral travel), or as a means for calling spirits from the upperworld or underworld. Staffs and stangs are also used to mark out the area of a circle or compass by literally drawing the boundary in the dirt.

Some examples of stangs;
