Drying Herbs

Drying herbs is not that hard, it is a little scary for some but it is very simple.
Gather the stems of the herbs into an rubber band and then hang them upside down , that's it. . Hanging them upside down and making sure they have air around them will do the trick, even in a cool area. Once they are dry, just crumble them or use a mortal and pestle and store them in air tight jars. I have a basement so this is the best place. If you do not you can hang them anywhere you have space, make sure there is a tub underneath. Another way is to take your cuttings and place them inside a paper bag (lunch bag size) with the cut ends tied up and at the opening of the bag. With the herbs hanging down into the bag, cut a few air holes on the sides of the bags. hang it up by the stems in a dry place. The herbs keep quite a bit of their oils and flavor.
