One thing I don't understand is why people claim to be Otherkin.

People identify with these concepts of spiritual entities and believe that because of this emotional investment in a concept that their spirit is actually that of one of these spiritual beings - many of whom, honestly, are more fantasy than fact in the first place.

Hello,
I see Otherkin in a broader term; these may be people who don't actually believe they are a mythical creature but feel like they ''relate'' to the mythical wold better than they do human and so choose what they call a personality creature which is generally the matched stereotypical attributes a creature has to the said human.

To my experience though, those who relate to such creatures usually say that they relate, while those that believe their spirit is such outright call themselves otherkin.

I think Otherkin is a new term for old shamanic practice. The shaman often believes in himself as being his power animal in the other world which is the animal that gives him power in life. Otherkin also encompasses totemist practices as well, with an understanding of the divinatory meanings of animal signs and using the animals and mythical creatures as archetypal energies in spiritual and magical work. We align with the energy of a particular spirit whether mythical or real to achieve what we need, as an internal system of magic, as opposed to casting spells outside of the self. We can cast spells too, its just a different aspect of magic.
