Your sign doesnt always mean that is your element. Some choose to work their astrological sign element. But others work with the elements they feel connected or comfortable with. You can learn all the elements. But its to learn your basics also. There are 4 main elements. Earth, Water, Air and Fire. There is a 5th element named Spirit. But some people dont really use that element in their works and some do. Everyone is different in their beliefs.
Working with all elements can be a good thing but i would suggest maybe try to work with an element you feel attached too the most and work with it first, then the others.

We do not have simply one Element. That seems to be a misconception that started with the movie The Craft. We are made up of all of the Elements and one should try to build a relationship with all of them in balance in order to fully work with any of them. Sure it's true that at least at first you will feel more comfortable with one or two of the Elements. That just means that you need to spend more time working on the ones with which you are not comfortable.
In the Western school of magic there are the four Elements of Earth, Air, Fire, and Water. However many, including Traditional Wiccans, add to that the Element of Spirit.
In Eastern magic there are five Elements, water, fire, wood, metal, and earth.

I would recommend studying all four of the elements, Earth, Air, Fire and Water. Spirit is a special consideration. It is life whereas the elememtal energies are the fundamental building blocks of creation. Spirit interacts with the four elemental energies and causes them to function correctly to create reality, so spirit actually governs the other elements, not in a dictatorship manner but in a guiding and nourshing way.
