Tonic wine is a wine in which a single herb or blend of herbs, barks, roots or spices has been macerated for a short period of time. It is a pleasant and effective way of taking tonic & medicinal herbs to aid the digestion & strengthen the body. The most well-known and popular kind of tonic wine is the winter favourite mulled wine, a heated blend of red wine and orange juice infused with Cinnamon, Nutmeg & cloves. It is an excellent cure for the winter blues.

Tonic Wines are usually best prepared with a medium to sweet white wine, as many people are intolerant to red wine, which can cause headaches. If possible, use an organic wine when making your own tonic wines.

    Tonic Herbs

Here’s a selection of herbs used in tonic wines. Wherever possible use fresh herbs (dried roots, berries or barks can also be used). Do not use powdered spices in these recipes, they will be difficult to strain off and leave a gritty taste in the mouth.

These are all suggestions to be added to a 750ml bottle of wine.

Borage (Borago officinalis) a handful of fresh herb steeped in medium white wine for several hours with the juice of a lemon makes a refreshing & restorative summer drink that lifts the spirits.

Cinnamon (Cinnamomum zeylanicum) one quill steeped in either red or white medium wine for one week, it sweetens the wine and is warming and stimulating.

Ginger (Zingiber officinale) a 1” piece of root steeped in red or white wine for one week. Ginger is revitalising, warming and stimulating. Good for indigestion & colds.

Lemon Balm (Melissa officinalis) a handful of fresh herb steeped in sweet white wine for several hours makes an uplifting & cheering wine, very good for the winter blues.

Peppermint (Mentha piperita) a handful of fresh herb steeped in a medium to sweet white wine is a good tonic wine, excellent for settling the stomach.

Sweet Woodruff (asperula odorata) 5g of fresh flowering herbs steeped in medium white wine for 3 hours is an excellent tonic for strengthening the body and mind.

    Rosemary Tonic Wine

1 bottle of medium white wine
    6 sprigs of fresh rosemary

Open the bottle of wine and insert the sprigs of Rosemary (You may need to pour out a little of the wine so that the herbs will fit in the bottle). Make sure that the herb is completely immersed in the wine. Cork the bottle and leave in a cool, dark place for two weeks. Strain off the herbs and take a small glassful (about 250mls) as a tonic. Rosemary improves circulation, it is also a stimulant, so avoid taking before bed. Take half an hour before meals to aid the digestion.

Macerating herbs in vinegar is an excellent method of preserving their medicinal properties, as vinegar absorbs the minerals and calcium within herbs far more effectively than water does. Herbal vinegars are a good non-alcoholic alternative to tinctures, and an easy way to take tonic herbs. Externally, vinegar is antiseptic and anti-fungal. A cold compress will reduce swellings & ease sunburn as well as insect bites and wasp stings, but should never be applied neat, or on broken skin.

    Making Herbal Vinegar

When making herbal vinegars ensure that all your equipment is clean and sterile. Do not use any metal implements when making herbal vinegars. Seal jars and bottles with glass stoppers or plastic lids, as metal and vinegar react badly with each other. If using fresh herbs, allow them to dry overnight in a cool, dark place, if damp herbs are put into vinegar, they may spoil.

Garlic (Allium sativum) is antiseptic and antifungal, eases sore throats when gargled. It is also a good tonic that stimulates the immune system.

Chamomile (Matricaria recutita) soothes itchy skin conditions. Added to bathwater it helps treat fungal infections. As a hair rinse, it soothes sore scalps & lightens hair.

Lavender (Lavandula officinalis) is antiseptic & stimulating. It makes a good hair rinse for dry and itchy scalps. It soothes inflamed or sore skin.

Peppermint (Mentha piperita) is antiseptic, making a good gargle for sore throats. It also eases sore gums & can be added to bath water to soothe sore skin.

Rosemary (Rosmarinus officinalis) is an excellent tonic herb. It is also good hair rinse for itchy scalps. It can be added to bathwater to soothe sore skin.

Sage (Salvia officinalis) is antiseptic and a good tonic herb. Used as a gargle it soothes sore throats. As a cold compress it eases bruises. It can also be used as a hair rinse for itchy scalps, and to darken hair. Avoid use during pregnancy.

Thyme (Thymus vulgaris) is a powerful antiseptic & anti fungal herb, it eases coughs & bronchial troubles. As a gargle it soothes sore throats & gums. Avoid during pregnancy

    Rosemary Vinegar Recipe

15g dried herb (or 30g fresh herb)
    200ml white wine vinegar

Chop or shred the herbs and put in a sterilized glass or plastic container. Pour over the vinegar, ensuring that all the herb is covered. Seal and keep in a cool, dark place for two to four weeks (depending on how strong you want the vinegar), shaking every few days. Strain & store in an amber glass bottle. This will keep for up to six months if refrigerated.

Dose: as a daily tonic, take 1 tsp in a glass of water once a day.

Herbal vinegars can also make a very effective gargle. Add 1 tsp to 250 ml of water.

You must take little stones from a young swallow's stomach. Be sure that the nestlings in which you find the stones are well grown. Take care that once you retrieve the stones they touch neither earth, nor water or any other stones. Select three of these and then put them on the person in distress, and he will soon be well. They stones are good for headache, for pain in the eyes, against temptations of a fiend, against nocturnal demons, for ague, against incubi, for sexual constriction, for bewitchment and against hexes.

Gather bones of chickens and dry them in the sun for a few
days. Then when you are ready to do this hex make sure you
are worked up into a frenzy of anger and hatred. This will
add to the potency of your hex! Be thinking of all this
while doing this hex and when it says "With these bones I
    now do crush
," take a hammer or use your feet to stomp and
crush these bones as if they were your enemy before you!

When you are done sweep, them up and place them in a bag. You
will then want to sprinkle the dust and remains of the bones
on your enemy's property around his house.

If you have a bell ring it 3 times and say...

"I call upon the Ancient Ones from the great abyss to do my
bidding I invoke Cuthalu, God of Anger and the creatures of
    the underworld hear me now."

"Bones of anger, bones to dust
full of fury, revenge is just
I scatter these bones, these bones of rage
take thine enemy, bring him pain
I see thine enemy before me now
I bind him, crush him, bring him down
With these bones I now do crush
Make thine enemy turn to dust
    torment, fire, out of control
With this hex I curse your soul
    So mote it be!'
