Your target is going to take longer to come to you because you used honey. Honey naturally moves slow and so will your work. Sugar, however moves quickly.
I have honestly never heard of this Monday, Wednesday, Friday thing but I will assume its a geographical difference.
If it were me I'd give the old work to the man at the crossroads with an offering of thanks and start new as suggested.
Assuming divination was already done and approved, Id light the red candle in the jar and read the wax to see if further work needs to be done.
The beauty of a honey or sugar jar is that you dont need to continue to do candle work with it unless you are giving it to a Saint to work with. Shaking the jar while praying an appropriate psalms or just your intention will keep the work going.
May I ask, Im new to magic and Im intrigued. What is a divination and in other posts it mentions free will etc, does a honey jar not violate free will?

Divination examples would be tarot. You speak to your ancestors and/or spirits to get their advice as to whether or not the work should be done at all.
As for free will - That has nothing to do with traditional conjure. While each worker has their own personal ethics, typically force, harming, helping, what have you all have a valid place in work and is looked at in the same neutral manner.
If you wanted to, for example, to make a person lose their job- you would first consult spirit(s) to see if this is the correct course of action. If they say yes, you go. If not, you consider other ways of obtaining what your goal is.
Of course, it will vary from worker to worker as there are difference in conjure depending on region.
