Chaos magic is magic that you do in a fashion where it does not make you feel connected to it. Like working with the saints/angels one day and then voodoo the next. You could poke a doll to make someone feel pain and heal another that should die, just to bring about change. Those truly of Chaos believe that change is like birth. Destruction/Birth is a constant cycle to them. I personally like the Babylonian beliefs on Tiamat. She was the Goddess and creator, the personification of chaos in their myths and I find myself drawn to it more and more every time I read about them :)
chaos [at least from the draconian teaching] is very powerful, and unpredictable, you need to learn to think outside the box, since it's not a traditional element. for instance, if you cast a rain spell, chaos could work in the past to alter the future, change the future, or choose not to work at all, it can get rather confusing. it's powerful and un-tamable you need to work as one with chaos in order to 'control' it.
