There are 8 sabbats, Yule, Imbolc, Ostara, Beltane, Litha, Lughnassadh, Mabon and Samhain. They are seasonal. Esbats are the celebrations of the full moon and happen 13 times a year :)

Another way to look at the difference, is that the Sabbats are festivals of the sun, and Esbats are festivals of the moon, in accordance with orbits. Some practitioners regard sun festivals as god oriented, and moon festivals as goddess oriented.

New, waxing, full, waning, and dark moons can all be celebrated as Esbats. It is a matter of your own preference. Acknowledging all phases of the lunar cycle lends opportunity to honor all aspects of the goddess.

Together, Esbats and Sabbats present a balance of male and female deity.

Whether one celebrates them or not depends largely on what your particular path might be. If you're a Wiccan then celebrating both the Sabbats and the Esbats is an integral part of Wiccan religious practice.
